• Harvest Method: Olives are picked by hand and processed within a few hours at the press located in the center of the olive grove.

• DOP Requirements:
  • Oil must be produced from at least 90% Nocellara di Belice, Biancolilla, and Cerasuola olives.
  • Up to 10% of other typical varieties allowed: Giarraffa, Santagatese, and Ogliarola Messinese.
  • All post-harvest processes (crushing to packaging) must occur within the DOP territory.
  • Olives must be crushed within 48 hours of picking.
  • Oil yield must not exceed 22% of the weight of collected olives.
